Blackberry Mock Champagne
For our New Year's Eve celebration with the kids this year I thought I would make some special drinks for the kids to toast with - Blackberry Mock Champagne.

I added home-made blackberry syrup to champagne glasses and topped it with sparkling spring water. I added some faux gold sparklers and voila, a festive drink for our family New Year's Eve celebration!

Blackberry Mock Champagne

Blackberry Syrup (makes 4 servings)

  • 1-1/2 cups of blackberries + 4 for garnish
  • 2/3 cup water
  • 6 Tbsp honey or sugar (slightly less than 1/2 cup)
Directions for syrup:
  • Add blackberries and water to pot, mash blackberries, and simmer for 10 minutes stirring occasionally.
  • Stir in honey or sugar, take off heat, cover, and sit for 20 minutes to let seep.
  • Strain and refrigerate until well chilled.

  • Add 2 tablespoons of blackberry syrup to bottom of each glass and top with sparkling spring water.
  • Top with a blackberry for garnish.
  • Add faux gold sparklers for a festive touch.
